Blueberry Muffins

Ingredients

4 oz plain flour

4 oz butter, softened

2½ oz caster sugar

2 free-range eggs

1½ tsp baking powder

4½ oz blueberries

1 pinch grated nutmeg

Directions

Cream the sugar and butter, next gradually add the eggs while mixing for three minutes. Add the flour, baking powder, and nutmeg. Stir to combine, and leave in the fridge overnight.

When it’s done, preheat the oven to 390°F.

Add a spoonful of mixture into each muffin case, filling them just over halfway. Drop about eight blueberries into each muffin.

Bake for 21 minutes or so until the tops are golden.

Let them cool to warm before serving.
